Charter Yacht THREE MOONS: Sailing the Spanish Virgin Islands

Sailing the Spanish Virgin Islands... So Close, Yet So Far Back in Time!

Just six nautical miles to the east of Puerto Rico lies another world, the Spanish Virgin Islands, which some consider the most beautiful cruising grounds in the Caribbean. Made up of the islands of Culebra and Vieques and their surrounding islets and cays, this area is bedecked with white sand beaches, sapphire gin-colored water, hills to climb and reefs to explore.


Although the Spanish Virgins lie just 6 miles from Puerto Rico and 15-20 miles from the U.S. Virgin Islands, they are far less crowded. Even though they're part of the United States, they have none of the commercialism of the U.S. Virgin Islands, nor the crowds of charter boats that fight for moorings in the British Virgin Islands. For those who are looking for a boating vacation where gunk-holing is the order of the day and star-gazing de rigueur for the night, the Spanish Virgin Islands are perfect. Old hands describe them as "the BVIs 35 years ago." Why are these islands still so pristine and unspoiled? Blame it on the Marines -- and the U.S. Navy -- they owned the islands for private operations until the mid-1970's. It’s an easy flight to either San Juan Puerto Rico or St. Thomas, USVI, then on to the Spanish Virgin Islands!

If you are happy away from the crowds and beach bars (seriously, there aren't many of either!) you can easily spend a week in one or two anchorages and be perfectly happy. Depending on the weather, you have many excellent anchorages to choose from. Please note that this sailing area is best during our charter months of May and June. The waters and anchorages can be very rough during the winter months. Although there are many variations on this theme, here's a suggested itinerary for one week departing from Fajardo, a town in the southern part of Puerto Rico.

  • FIRST DAY: Fly to San Juan, Puerto Rico early in the morning and take a 45 minute taxi ride to Fajardo, where you'll board Three Moons. We'll take off across Vieques Sound for Isla Palominos. If you are fishing enthusiast, bring your favorite rod and have your lines out; Vieques Sound is full of bonito, tuna and dolphin. Once we drop the hook, we’ll barbecue the fish you caught (or the steaks you didn't), and enjoy a snorkel around the northern reef of the area. Later in the evening, see how many constellations you can identify in the night sky.
  • DAY 1: Our sail today is toward the island of Vieques. Hidden on the coast is one of the most spectacular Bioluminescent Bays in the world. The mysterious blue-green light is created by micro-organisms which thrive in an environment uniquely suited to their needs. A trip into the bay on a balmy night is a magical experience. Fish flash by in dark water, and a swim is like floating through fairy stardust! Quiet honestly, it was one of our favorite experiences we’ve ever had in the islands!
  • DAY 2: Sail east to Cayo Luis Pena, just off the island of Culebra, and anchor in the bay on its northwest side. Pretend you're on "Survivor" and dive for lobsters under the coral overhangs -- Puerto Rico's lobster hunting season is year-round. If you're not yet ready to stop for the night, we'll take Three Moons a bit further east into Encenada Honda, Culebra, and anchor just off the town dock.
  • DAY 3: Explore Culebra, which isn't very difficult to do. Because the U.S. government has one of its most diverse National Wildlife Refuges on Culebra, land developers haven't made much of a toehold there, either. There are three roads, each of them leading to a beach, and 2,000 people on the 11-square-mile island. Most people live in Dewey, the town all the locals call "Culebra," and everyone is friendly, laid-back and unaffected. Stop in for an introductory beer at the Dinghy Dock and meet the local expats. Take an early morning hike across the island to Playa Flamenco, one of the most spectacular beaches anywhere in the Caribbean, and see how many of the 85 kinds of birds that nest on Culebra you can identify. At night, treat yourself to dinner at Mamacitas (it's an ABSOLUTE "must do"!) on the narrow canal between Dewey and Ensenada Honda. The food is inexpensive, fresh and great!
  • DAY 4: We can anchor in either Dakity Harbor or Bahia de Almadovar just to the east and spend the rest of the day snorkeling and swimming. You're very likely to spot some turtles paddling about. By this time you should be well into "island time." Revel in it. Watch the sunset and the lights of St. Thomas as they come on 15 miles to the east, and congratulate yourself for being a whole world away from civilization.
  • DAY 5: If there isn't a northern swell running, we can sail up to tiny Culebrita and anchor off its northern shore, a 400-foot crescent of that ubiquitous white sand that's everywhere in the Spanish Virgins.
  • DAYS 6 & 7: The last two full days will vary depending on where your pick-up and drop-off points are located. Either way, you know us and you know for a fact that we'll have a great time!

RECIPE: BBQ Sauce for Chicken Wings, etc from THREE MOONS

Shelly, owner-operator & chef extraordinaire of the 72-foot charter yacht Three Moons, is sharing their favorite BBQ sauce recipe for the first time online!

This is extremely good timing as you probably are aware that this weekend is the Super Bowl, and it is estimated that Super Bowl watchers will consume 1.25 BILLION chicken wings which adds up to a whopping 100,000,000 pounds of wings for this weekend alone... Amazing!

What is the secret of this really great thick sauce?  Two words:  molasses & oranges.  Mmmmmm... and it's good on everything... chicken, shrimp, ribs, pork, burgers... you name it! Shelly says she'll probably put some of this savory barbecue sauce on their scrambled eggs on Super Bowl morning.

THE CAPTAIN'S FAVORITE BARBECUE SAUCE

Makes approximately 6 cups

Ingredients:
  • 4 tbs Unsalted butter                               
  • 2 cups Vinegar
  • 2 cups Ketchup
  • 1/2 cup Worcestershire sauce
  • 1/4 cup Molasses, or more to taste
  • 1/4 cup Brown sugar
  • 3 tbs Onion, finely chopped
  • 2 tbs Tabasco Chipotle Pepper Sauce
  • 3 cloves Garlic, minced
  • 2 tsp Liquid smoke
  • 1 tbs Salt
  • 3 tbs Orange zest, or more to taste
  • 1 tsp Orange extract
  • 1 tsp Mrs. Dash Original Blend Seasoning
  • 1/2 tsp Black pepper
  • 1/2 tsp Cayenne
Method:
  1. In a large pot, bring all ingredients to a slow boil.
  2. Reduce heat and simmer for 30 minutes.

RECIPE: Chocolate Coma Cake - Yacht Three Moons

Start the New Year right with this decadent, award-winning dessert from one of our favorite charter yachts, Three Moons! I love the way Shelley decorated this cake... Beautiful!

CHOCOLATE COMA CAKE

Ingredients: 
  • 2 cups Sugar
  • 1 3/4 cups All-Purpose Flour
  • 3/4 cup Cocoa
  • 1 1/2 tsp Baking Powder
  • 1 1/2 tsp Baking Soda
  • 1 tsp Salt
  • 2 Eggs
  • 1 cup Milk
  • 1/2 cup Vegetable Oil
  • 2 tsp Almond Extract
  • 1 cup boiling Water

Instructions:

Heat oven to 350 degrees.
Combine dry ingredients in a large bowl and add eggs, milk, oil, and almond extract.
Beat for 2 minutes on medium speed.
Stir in boiling water. Batter will be thin.
Pour into two 9-inch greased and floured baking pans.
Bake 30-35 minutes.
Cool 10 minutes and remove from pans onto a wire rack.
Cool completely.

Frosting for the outside of the cake:
  • 1 stick Butter
  • 2/3 cup Cocoa
  • 3 cups Confectioner's Sugar
  • 1/3 cup Milk
  • 1 tsp Almond Extract
For the frosting, melt butter and stir in cocoa. Alternately add powdered sugar and milk, beating on medium speed. Add almond extract.

Frosting for the middle of the cake:
  • 3/4 cup Crunchy Peanut Butter
  • 3/4 cup Caramel Sauce
For the middle frosting, stir together both ingredients in a large heatproof bowl and warm slightly in the microwave until mixable.

Garnish:

For the competition, I wanted this dessert to make a big impression. More is More, right? So I made this recipe into 4 extra large 13" round layers. Between the layers, I added a mixture of crunchy peanut butter and caramel sauce. Then, using a star shaped cookie cutter, I cut out and baked pie crust "stars". These were cooled and brushed with 24 carat edible gold dust. I also purchased some pre-formed chocolate decorations that were a fancy lace design. The cake was gorgeous when surrounded by freshly cut and fanned strawberries.

Capt. Randy said the finished creation weighed about 20 pounds! There was enough chocolate to put the judges into a "Chocolate Coma"!

News & Recipe from Charter Yacht Three Moons - Sail the Virgin Islands with Randy & Shelly

Randy & Shelly Tucker, owner-operators of the 72-foot charter yacht Three Moons, will be celebrating Thanksgiving at their home in Tennessee this year. Shelly says that Southern-style cornbread dressing has always been at the top of her Thanksgiving list of favorites, but this year she's going to go "outside of the box" and introduce family and friends to mofongo.
More from Shelly: What is mofongo? Wikipedia defines it as ultimately of African origin and traced to both Puerto Rican and Dominican cuisine. You’ve seen those lonely looking green plantains at the grocery store and wondered what to do with them? Well, I have the answer if you are looking for some down-home, island-style comfort food! Barring all carb-control, I think mofongo is a great replacement for mash potatoes, rice and other starchy side dishes.

There are two things we have to have every season when we travel through Puerto Rico on our way to and from our charter yacht in the Virgin Islands: mojitos and mofongo! OK, so maybe we have to have some tostones (fried plantains), rice & beans and lechon (whole roasted pig) too!

Typically, mofongo is served in a tall wooden pestle style bowl. Delivered to your table, the mofongo ingredients are prepared and then mashed with mortar in a wooden bowl.

Since I don’t have any tall wooden bowls, I like the adaptation of the recipe below:

Plantain Mofongo

Ingredients:
  • 2 green plantains

  • Vegetable oil for frying

  • 1 tablespoon olive oil (not extra virgin)

  • 2 cloves garlic

  • 1/4 teaspoon kosher salt

  • 1/2 ounce bacon

  • 2 teaspoons saffron broth

  • 8 Jumbo Shrimp Peeled and Deveined

Procedure:
  1. To make it easier to peel the plantains: Under running warm water, cut off 1/2 inch from both ends of the plantains. Using a sharp knife, score the skin lengthwise in three different sections. Slide the tip of the knife or your finger under the skin and begin to pull it away, going from top to bottom.

  2. In a frying pan or deep fryer, heat about 2 inches of vegetable oil to 350º F. Cut the plantains into 1-inch pieces (or half-inch for smaller tostones), and add to the hot oil. Fry for about 6 minutes until they start turning golden and are tender inside. Remove from the oil, and drain on paper towels.
  3. Prepare the mofongo: Oil the inside of a deep wooden or glass bowl with the olive oil. Add the garlic and 1/4 teaspoon of salt and, with a wooden spoon, pound the garlic to a paste. Add half of the fried plantains to the bowl and pound to a coarse mash, incorporating the garlic paste as you pound. Add the bacon, saffron broth and the remaining pieces of plantain. Season with 1/4 teaspoon of salt, and pound to mash the newly added plantain and incorporate the others ingredients. Rotate the bowl as you go, pounding with a downward motion toward the sides of the bowl. Once the mixture is mashed, spoon it into a ramkin or 4oz bowls. After molding and smoothing out the surface, flip onto a plate. At this point the mofongo should look like a half dome.
  4. Saute shrimp in a little oil or butter and cook until done. Place over the Mofongo and top with the saffron broth.

Saffron Broth

Ingredients:
  • 2 cloves of garlic

  • 2 pinches of saffron

  • 1/4 cup Unsalted Butter

  • 1 cup organic chicken broth

  • Salt

  • Fresh green peas
 Procedure: 
  1. Thinly slice 2 garlic cloves while preheating sauté pan at medium temperature.
  2. Add butter and the garlic and bring up temperature to high.
  3. Sauté for a couple of minutes and add 1 cup of chicken broth, bring to a boil and add more butter until you have a nice and smooth consistency.
  4. Add 2 pinches of saffron and salt to taste. Allow saffron to incorporate an even color by stirring lightly.
  5. Lastly, add the peas and cook further a couple of minutes.

Three Moons is one of our favorite charter yachts in the Virgin Islands. Our only problem with them is that they are difficult to book because they are very popular and their calendar fills up quickly :)

Key Lime & Coconut Chocolate Cheesecake Recipe - Charter Yacht Three Moons

We received a recipe this morning from Shelly, chef & co-owner of the 72-foot charter yacht, Three Moons.

 Three Moons

Three Moons is a 72-foot Irwin ketch with a crew of three, owner-operated by Shelly & Randy Tucker. Three Moons is fully air conditioned and accommodates up to 8 guests in 4 double cabins with ensuite heads.

Carefully guarded like a leprechaun's pot of gold, our recipe has never been shared, until today! Enjoy!

There's nothing like the tropical taste of key lime juice mixed with chocolate and coconut that will have you dreaming of the islands! Competing against nearly thirty chefs, Three Moons won third place in the November 2009 Virgin Islands Charteryacht League Culinary Competition with Kiss-Me Key Lime 'n the Coconut Chocolate Cheesecake.

Join us in celebrating our eleventh culinary competition award in the past twelve years! That's no blarney! 
 
KISS-ME KEY LIME "N THE COCONUT CHOCOLATE CHEESECAKE
Serves 16
Prep Time: 15 Minutes
Baking Time 55-65 Minutes

Crust:
  • 1 Pkg plain devil's food cake mix
  • 6 TBS butter, melted
  • 1 large egg, at room temperature
Filling:
  • 2 cups semisweet chocolate chips
  • 2 Pkgs (8oz each) cream cheese at room temperature
  • 1 can (14oz) sweetened condensed milk
  • 3 large eggs, at room temperature
  • 1/2 cup Key lime juice, at room temperature
Meringue Topping:
  • 8 egg whites
  • 1/2 cup sugar
  • 2 tsp. cream of tartar
  • 1 tsp. coconut flavoring
Garnish:
  • Toasted coconut & twists of lime

  1. Place a rack in the center of the oven and preheat the oven to 325 degrees. Set aside a 10-inch springform pan.
  2. Place the cake mix, melted butter and 1 egg in a large mixing bowl. Blend with an electric mixer on low speed for 2 minutes. Stop  the machine and scrape down the sides of the bowl with a rubber spatula. The batter should come together into a ball. With your fingertips, pat the batter evenly over the bottom and up the sides of the springform pan, spreading it out with your fingers until smooth. Set the pan aside.
  3. Place the chocolate chips in a medium-size glass bowl and heat in the microwave on high for approx. 2 minutes. Remove the bowl from the oven and stir with a small rubber spatula until they are melted. let the chocolate cool slightly. Place the melted chocolate, cream cheese and sweetened condensed milk in a bowl and blend with a mixer on low speed until just combined, 30 seconds. Increase the mixer speed to medium and beat 1 minute more to thoroughly cream the mixture. Add the 3 eggs and the lime juice to the batter. Beat on medium speed for 1 minute scraping down the sides of the bowl periodically. Pour the filling into the crust and place into the oven.
  4. Bake the cheesecake until it looks shiny and the center barely jiggles when you shake the pan, 55-65 minutes. Remove the pan from the oven and place it on a wire rack to cool for 30 minutes.
  5. Preheat broiler. Beat egg whites, sugar, cream of tartar and coconut flavoring until stiff peaks form. Spread on top of baked cheesecake. Place under the broiler and watch carefully as the meringue browns. Remove when when lightly browned and cool.

Randy & Shelly wrote to us yesterday with a few interesting bits and pieces...

Randy & Shelly, owner-operators of charter yacht Three MoonsThree Moons, their 72/65-foot Irwin charter yacht, has been hauled out in Virgin Gorda for HER summer vacation. "Even after many haul outs over the years, we never get used to the strange sight of our home up in the lift straps traveling slowly down the road in the boat yard! It's a bit like taking the "Big Top" down at the circus which culminates with a big party at the end of the day!"

They also gave us an update on what their past crew are up to! "Most of them work for us at least two years. Yes, they move on to other things and new lives as time goes by. Every one of these gals became a part of our family. We've joked many times that we don't have kids; but we really do!"
Shauna Kuhn returned stateside to earn her masters degree in Environmental Studies and now works at Stony Brook University as a research technician. She's happily involved in a oyster restoration project in the Hudson River, Manhattan, New Jersey, Jamaica Bay (Queens, NY) and Shelter Island (eastern end of Long Island). The goal of her team's project is to figure out where, if any place, they can restore the over harvested oyster population.

We all love Meredith "Mini-Moon" Hester and still see her often in St. Thomas!
Mere and her husband Jonny (captain of charter yacht Conundrum) have just announced that they are going to be parents in late December! We are so excited for both of them!

Katy Bednar was in St.Thomas last month to visit the "love of her life" and celebrate her birthday. She returned to Boston last fall and is doing well at Boston University studying dentistry. She's already interning; but says they won't let her do the fun stuff yet! Six years of dental school is a long time!

Becca Lee will be happily working with her new boyfriend next season aboard a 90' power yacht. We wish them both many great adventures and much happiness together!


Three Moons will begin their new season in November 2009. They are booked for New Years, but available through December 26th for a Christmas charter!

RECIPE from Charter Yacht THREE MOONS

We asked a few of our favorite charter yachts to share a couple of their favorite recipes whether it be an appetizer, main dish, or cocktail. Here's one from Shelly, owner-operator of the 72-foot charter yacht THREE MOONS.

Hi Bob & Sheila,

Here's a recipe that I tried out on our last guests... I really liked it and they did too!

These are very moist & tropical and a great way to add more fruit to your daily intake. It was one of those "Oh wow, these are better than I thought they would be moments!"

The best part is that there wasn't a single muffin left on the platter!

Shelly
Papaya Pineapple Bran Muffins
3/4 cup all purpose flour
1/2 cup whole wheat flour
1/2 cup bran flakes or raisin bran
1/2 tsp baking soda
1/2 tsp salt
1/2 cup sugar
1/2 tsp allspice

1/2 cup butter, softened
2 eggs, beaten
1 teaspoon vanilla
1/2 cup cubed fresh papaya
1/2 cup fresh chopped pineapple
1/2 cup chopped walnuts
1/2 cup chopped pecans
  • Preheat oven to 350. Grease one loaf pan.
  • Sift together in large bowl all dry ingredients, except nuts.
  • In a separate bowl, combine wet ingredients except fruit beating until light and fluffy.
  • Gradually beat in flour mixture; fold in fruit and nuts.
  • Pour batter into pan, baking approx 50 minutes until a toothpick comes out clean.
  • Cool 10 mins before turning out onto a wire rack.
  • Enjoy!

"It's fun to get people excited about planning a vacation that promotes a healthier global footprint. What are we talking about? Sailing aboard Three Moons! When our yacht is under sail, she's 50 steady tons of pure fun lifted by the wind on the turquoise waters of the U.S. Virgin Islands and British Virgin Islands. Sure, there are times when the engine or generator is running; but we're taking extra precautions with our equipment to make sure that we're conscious of our environment. There are other ways Three Moons is thinking greener too!

"We've been working this season with local farmers to provide more produce for our provisions. There's a local gardener who provides all our fresh herbs. The fish prepared in our Award-winning galley is caught by area fisherman and is of the certified sustainable variety. Many of our fruits & vegetables are delivered straight to our yacht via a "boat boy" who takes pride in his fresh mangos, papaya, pineapple and other tropical fruits.

"Our islands are truly struggling with the lack of local recycling facilities for plastic bottles. We are now asking our guests to bring along a personal water bottle for our triple filtered water if they choose. This has been very successful! Yes, we also provide plenty of bottled water for our guests as well as insulated water bottles. The decision is totally for the guest to make; they seem to appreciate helping our islands work toward a "greener future"! Stay tuned...more great green ideas are on the way!"
Three Moons is a fully air-conditioned, 65-foot ketch which accommodates up to 8 guests in 4 double cabins.

For charters taking place before June 30, 2009, Three Moons is waiving the standard 10% surcharge for charters of 5 nights or less.
