RECIPE: Catamaran ENCORE - Pineapple & Coconut Muffins

Pineapple and Coconut Muffins - makes 6

INGREDIENTS:
  • 2 cups of flour, 2 tsp of baking power
  • ¾ cup of sugar, a pinch of salt
  • ½ tsp of cinnamon
  • 1 ¼ cup of baking coconut, 1 ¼ cup melted butter
  • ¾ cup of milk
  • 2 eggs
  • 1 cup roughly diced fresh pineapple

METHOD:
  • Sift the flour, baking powder and salt.
  • Add the sugar, cinnamon and coconut.
  • Make a well in the center and add butter, milk and eggs.
  • Mix and then fold in the pineapple.
  • Divide the mixture between 6 muffin cups and,
  • Bake for 25-30 minutes @ 350°F.
