Charter Yacht Pacific Wave & Hurricane Tomas

We know that the charter yacht Pacific Wave likes to hang out in St Lucia so we contacted Lynn & Mark to see how they fared with Hurricane Tomas.

Hi Sheila & Bob

We're safe & so is Pacific Wave.

We were however at anchor in Bequia so we were 25 miles South of the eye, and we took a battering for for about 30 hours, but fortunately all is good!  We were very glad that we renewed our anchor chain which was only 3 years old, we shipped really good quality chain from the UK to Trinidad last month & overhauled our anchor windlass, money well spent!  We had to re-anchor at one point on Saturday afternoon at the height of the storm in 75 knots, but all was fine.

There's one yacht on the rocks & another cat demasted but apart from that most of the yachts survived.

I'm glad that it didn't head to you. [We are at anchor in St Croix aboard our sailboat]

Thanks for thinking about us.  We're just going on charter now, we have a Bequia pickup, hence why we're here.

The Virgin Islands were not affected by Hurricane Tomas. We are surprised that we didn't get much rain.  In fact, where we are, you couldn't tell that there was a category 2 hurricane 230 miles to the south.


Hope it continues to fizzle out and won't become a threat to Haiti or others.

Charter Yacht Pacific Wave: Getting ready for new 2011 charter season

Lynn & Mark, from the 72-foot sloop Pacific Wave, sent us a note this week.

Just to let you know that Pacific Wave and her crew are ‘fighting fit’ and raring to go for the new season. We’ve been busy through the summer in Trinidad doing routine exterior paintwork and interior varnishing, keeping Pacific Wave in that all important ‘tip top’ condition – ready to impress new and repeat charter guests in 2010/11.

During a short break in the UK Lynn scoured the best and most fashionable stores for new bikini’s, luxury Egyptian 600 count cotton linens, 700 gram towels, and lots of new season Molton Brown toiletries. Lynn also refreshed her ‘unlimited area’ ocean theory and astro-navigation. She’s unlikely to put this into practice on passages from Tortola to Peter Island but she can now ‘wow’ guests with her sextant and astrological position fixing. Our guests last season really enjoyed looking at the stars with our electronic star identifier. We are sure they will love learning from Lynn more traditional methods as well.

Mark also took himself off to work with some very experienced chefs looking for new prize winning dishes. His new finds include: delicious home baked granola; a Panettone and vanilla bread and butter pudding; asparagus, garden peas, & French beans in a creamy risotto topped with grated parmesan and chopped mint; roasted fillet of grouper smeared in a sundried tomato and basil paste wrapped in Parma ham. We are determined to continue our reputation for award winning first class dining.

They will splash Pacific Wave in Trinidad in mid-October and head directly to a Grenadines charter before attending the two November charter yacht shows in the Virgin Islands.

RECIPE: Pacific Wave Grilled Chilled Vegetable Terrine

We asked the chef aboard PACIFIC WAVE, Mark Miles, if he had a recipe he'd like to share with us.

PACIFIC WAVE GRILLED CHILLED VEGETABLE TERRINE

This is an excellent lunch or dinner starter which can be prepared the evening before.  Served chilled with fresh Basil leaves and a light dressing.

Ingredients – Serves 6:

2 large Red Peppers – quartered, cored and seeded
2 large Yellow Peppers – quartered, cored and seeded
2 large Courgettes – sliced lengthways
1 large Aubergine – sliced lengthways
1 large Red Onion – thinly sliced
75g Raisins
6 tablespoons Olive Oil
1 tablespoon Red Wine Vinegar
1 tablespoon Tomato Puree
400ml Tomato Juice
1 sachet powered Gelatine
Fresh basil leaves – to garnish

For the dressing:

6 tablespoons Olive Oil
2 tablespoons Red Wine Vinegar
Salt & Ground Black Pepper

Process:

1. Place the prepared peppers skin side up under a hot grill and cook until the skins are blackened. Transfer to a bowl and cover with a plate.  Leave to cool.
2. Arrange the aubergine and courgette slices on separate baking sheets.  Brush them with a little oil and cook under the grill, turning occasionally, until they are tender and golden.
3. Heat the remaining olive oil in a frying pan, and add the sliced onion, raisins, tomato puree and red wine vinegar.  Cook gently until the mixture is soft and syrupy.  Set aside and leave to cool in the frying pan.
4. Lightly oil a 1.75 lt (3 pint) terrine, and then line with clear film leaving a little hanging over the sides.
5. Pour half the tomato juice into a saucepan and sprinkle with the gelatine.  Dissolve gently over a low heat, stirring to prevent any lumps from forming.
6. Place a layer of red peppers in the base of the terrine and pour in enough of the tomato juice with gelatine to cover.
7. Continue layering the vegetables, pouring tomato juice with gelatine over each layer, finishing with a layer of red peppers.  Add the remaining tomato juice to the pan and pour into the terrine.  Give it a short tap, to disperse the juice.  Cover and chill until set.
8. To make the dressing, whisk together the oil and vinegar, and season.  Turn out the terrine and remove the clear film.  Serve in thick slices, drizzled with dressing and garnished with basil leaves.

 The table is set and is waiting for you!

Charter yacht PACIFIC WAVE based St. Lucia Caribbean

Pacific Wave is new to the charter fleet this year, but they are NOT new to boats and hospitality.

Yesterday, Lynn sent an email to keep us informed with what's going on with Pacific Wave.

Pacific Wave is now based in Marigot Bay Marina, St Lucia. This makes a perfect charter pick-up & drop-off location. Charter guests have free use of the 5-star Discovery Hotel and can enjoy it’s full facilities and pool to relax after the flight to St Lucia’s International airport. The best views in the Caribbean are just an easy hours sail down the coast where guests can spend that important first night on board watching the moon rise between the Piton’s. Although available for charter anywhere in the Caribbean this is now our adopted “Home Port” and makes for fantastic charter opportunities to the Grenadines throughout the summer until the end of August. In September and October she will be in the water at Marigot Bay, the best natural hurricane hole around.

With a beam of almost 34 feet (the length of OUR sailboat!) they had plenty of room to get through the bridge. Hey, that means we can go through sideways, if need be :)

Anyway, the purpose of this post is to show that we, Sheila & Bob of Paradise Connections Yacht Charters, live aboard our boat and we live among the charter yachts and see them on a daily basis... not just at a charter yacht show once or twice a year when the boats are all prettied up for showing off to the brokers. We're in touch with the coconut telegraph. We pass by the boats when we dinghy through the harbors, see crew shopping, in restaurants, and just around town...

A few weeks ago, Pacific Wave made a special trip to St. Maarten just to meet us and have us aboard for a visit. Tomorrow, we are going to visit a yacht that wants to enter the charter fleet and would like our advice. Next week, the catamaran Alidade is going to stop by St. Martin for a special visit to see us as we have not met the new crew. How cool is that?

Pirate Party in St. Thomas, USVI

We were sad when we heard Godiva announce on the St. Maarten's Morning VHF Cruisers' Net that they were leaving on the afternoon's bridge opening. Godiva has left the charter fleet and is now sailing back towards Florida. We'll miss them, as we had three charters with Dave & Marci during their short winter season.
