RECIPE: Tasting Trio... Treats from Charter Yacht Sayang

This summer in Malaysia, Ratna worked on new recipes. Here's one of her new creations. Enjoy!

TASTING TRIO OF
 
* Noodle-Wrapped Tiger Prawn with Chili Lime Sauce *
  * Spiced Chicken in Crisp Grana Cup *
* Mango Gazpacho with Mushroom Crostini *


  • NOODLE-WRAPPED TIGER PRAWN WITH CHILI LIME SAUCE
SAUCE:
Ingredients:
  • 2 small green Serrano chillies seeded and chopped finely
  • 1/2 cup lime juice
  • 1/3 cup chicken stock
  • 2 teaspoons fresh cilantro
  • 2 gloves garlic
  • 1 teaspoon sugar

Preparation:

Combine all ingredients in a blender and mix until smooth. Pour into saucepan and bring to boil stirring occasionally. Remove from heat and allow to cool. Serve warm with prawns.

PRAWNS:
Ingredients:
  • Tiger Prawns
  • Chinese egg noodles
Preparation:
Peel shrimp leaving tail intact, devein and wash well. Pat shrimp dry using paper towel. Wrap each shrimp with an egg noodle. Fry in oil until it turns golden brown. Drain excess oil by placing on paper towel. Serve hot with chili lime sauce.

  • SPICED CHICKEN IN CRISP GRANA CUP
Ingredients:
  • 2 tbsp sesame oil
  • 1 garlic clove
  • 3 spring onions
  • 1 tbsp cornflour
  • 2 tbsp rice wine
  • 4 chicken breasts
  • 1 tbsp five spice powder
  • 1 tbsp grated fresh root ginger
  • Chicken stock
Preparation:

In a bowl, mix together cornflour and rice wine, and set aside. Heat sesame oil in pre-heated wok. Add garlic and stir fry over medium heat for a minute. Stir fry onions for 1 minute then add chicken, five spice powder, ginger and chicken stock and cook for another 4 minutes. Add cornflour and rice wine mixture to thicken stock. Remove from heat and serve in cheese cup.

  • MANGO GAZPACHO WITH MUSHROOM CROSTINI 
Ingredients:
  • 2 cups of diced fresh mango
  • 2 cups orange juice
  • 1 tbsp extra virgin olive oil
  • 1 seedless cucumber
  • 1 small jalapeno pepper
  • 3 tbsp fresh lime juice
  • 2 tbsp chopped cilantro
  • Salt and freshly ground pepper
Preparation:

Process mango, orange juice and oil in blender until pureed. Transfer to medium bowl together with other ingredients. Season with salt and pepper. Refrigerate until ready to serve. Garnish with mushroom bruschetta.
